چکیده

Mango (Mangifera indica) is a tropical fruit with high nutritional value, and mango powder considered convenient ingredient in developing other industrial food products. In production, hydrocolloids could be added to improve the drying operation quality of powder. this study, concentration maltodextrin (6, 7.5, 9, 10.5 %) carrageenan (0.3, 0.6, 0.9, 1.2 pulp was investigated determine behavior color change refractance window drying. The results showed supplemented into control evaporation process. addition adverse effects on kinetic, but low (0.3%) increase effectiveness removing moisture. Weibull model moisture ratio during different formulations. values Deff were estimated range from 3.76×10?10 10.20×10?10 m2/s. After drying, dried product had an increment browning pigments And 9% highest brightness product. These findings would support application improvement powdered pulp.

Kinetics and Quality of Microwave-Assisted Drying of Mango (Mangifera indica)

The effect of microwave-assisted convective air-drying on the drying kinetics and quality of mango was evaluated. Both microwave power and pretreatment time were significant factors but the effect of power was more profound. Increase in microwave power and pretreatment time had a positive effect on drying time. The nonenzymatic browning index of the fresh samples increased from 0.29 to 0.60 whi...

Optimization of Freeze Drying Conditions for Purified Pectinase from Mango (Mangifera indica cv. Chokanan) Peel

Response surface methodology (RSM) along with central composite design (CCD) was applied to optimize the freeze drying conditions for purified pectinase from mango (Mangifera indica cv. Chokanan) peel. The effect of pectinase content (-2.66, 62.66 mg/mL), Arabic gum (-1.21, 10.21%, w/v), and maltodextrin (0.73, 7.26%, w/v) as independent variables on activity, yield, and storage stability of fr...

Power Ultrasound Application on Convective Drying of Banana (Musa paradisiaca), Mango (Mangifera indica L.) and Guava (Psidium guajava L.)

Abstract—High moisture content in fruits generates post-harvest problems such as mechanical, biochemical, microbial and physical losses. Dehydration, which is based on the reduction of water activity of the fruit, is a common option for overcoming such losses. However, regular hot air drying could affect negatively the quality properties of the fruit due to the long residence time at high tempe...

evaluation of microwave and convective finish drying parameters and drying effects on color of dried grapes

in this study, the possibility of microwave finish drying for two types of dried grapes (natural and sultana) was investigated. the samples were washed in water bath at given temperature ranges (25 and 45 c) for 30 to 60 minutes. after dewatering the samples, they were dried using microwave (at two powers: 270 and 450 w) and hot air convective dryer (at 50 c). water gain (%), effective moistu...

Molecular identification of Mango, Mangifera indica L.var. totupura

UNLABELLED Mango (>Mangifera indica) belonging to Anacardiaceae family is a fruit that grows in tropical regions. It is considered as the King of fruits. The present work was taken up to identify a tool in identifying the mango species at the molecular level. The chloroplast trnL-F region was amplified from extracted total genomic DNA using the polymerase chain reaction (PCR) and sequenced. Seq...
